The slow cooker is a magician. How? Take a cheap, tough stretch of beef. Drop it into the Hamilton Beach 7 quart slow cooker, say, or the Cuisinart 3.4 quart programmable slow cooker. Add carrots and onions, fresh thyme and red wine. Come back in three, four, five hours and suddenly that cheap, tough bit of meat is tender and succulent and gorgeous. If that is not magic, then what is?
